Yum! This is the best recipe I’ve ever come across. I’ve tried others since and am always disappointed. These are always a soft delicately crispy yet chewy treat.
1/2 cup butter
1/2 cup brown sugar
1/2 cup cane sugar (heaping, as cane is less sweet than the original white sugar it called for)
1/2 cup natural peanut butter
1/2 tsp sea salt
1/2 tsp baking soda
1 cup unbleached flour (can also add half whole wheat, but it will change the chew and texture)
1/2 tsp vanilla
Cream butter; add sugars gradually till creamy. Mix in egg, peanut butter, salt, baking soda. Blend in flour slowly and mix well. Roll into small balls and flatten with floured fork. Bake at 350 for 10-12 min. or till golden brown underneath.
Transfer to rack to cool.
